Sweet Potato Chips and Chipotle Mayo

Wholesome Sweet Potato Chips and Chipotle Dip

Ingredients:

Sweet Potato Chips:

1 large sweet potato
1 tablespoon olive oil
1/2 cup parmesan, grated
Salt and black pepper
2 tablespoons fresh parsley, chopped

Chipotle Mayo:

1 cup mayo
1 chipotle pepper from can of
chipotles in adobo sauce
Juice from 1/2 of a lime
Green onions, chopped

Directions:

1. Preheat oven to 400 degrees.

2. Quarter the sweet potato and then slice each quarter thinly. Toss the sweet potato slices with the olive oil in a mixing bowl.

3. Arrange the sweet potato slices in a single layer on a baking sheet. Season generously with salt and pepper and sprinkle the parmesan on top.

4. Bake for 10 to 15 minutes or until the cheese is melted and the sweet potato edges are lightly browned. Remove from oven and immediately sprinkle the parsley on top.

5. Meanwhile, combine all ingredients for the chipotle mayo in a blender; blend until combined. Top with the green onions and serve with the sweet potato chips.
