Wholesome Quinoa and Vegetable Lettuce Wraps

1 cup quinoa, prepared according to package directions
1/4 cup red onion
diced 1 Roma tomato
diced 1 small cucumber
diced 1 teaspoon garlic
minced 1 ripe avocado
pitted and peeled
1/2 cup Greek yogurt
Fresh lemon juice to taste
Black pepper to taste
Lettuce leaves (such as Romaine)
1. Combine the cooked quinoa, red onion, tomato, cucumber and garlic in a large mixing bowl; set aside. Mash the avocado in a mixing bowl. Add the yogurt and stir until combined. Add the avocado mixture to the quinoa and vegetables; stir gently. Add lemon juice and pepper to taste.
2. Spoon the desired amount of filling into the lettuce leaves and serve immediately.
Tip: Cater this recipe to your preferences by adding or swapping vegetables.
